Marvelous Molasses Cookies!!

Marvelous Molasses Cookies MapleMouseMamaYou are not seeing things folks. Yes I, MapleMouseMama, am posting another recipe.  Do not be alarmed.  The world as we know it is not changing.  I just wanted to share my hubby’s Marvelous Molasses Cookies with you. 🙂  Now I will admit that I did not make this batch, but I have helped in the past.  It is actually probably better that he do the baking anyway.  Someday I will tell you about the pie crust I made that turned a lovely shade of grey ( and not lovely like 50 Shades either..) But for now check out this yummy recipe, try it out and let me know how it goes!  The only downside of this recipe is that it is not egg free, therefore Master William can not have them, but we are on the hunt for a great egg free recipe he can have. 

Ingredients:

  • 3/4 cup margarine, melted
  • 1 cup white sugar
  • 1 egg
  • 1/4 cup molasses
  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground ginger
  • 1/2 cup white sugar

Directions:

In a medium bowl, mix together the melted margarine, sugar and the egg until smooth. Stir in the molasses. Combine the flour, baking soda, salt, cinnamon, cloves, and ginger on a piece of wax paper, then blend it all into the molasses mixture. Cover, and chill dough in the fridge for 1 hour.  Let it be noted that we have left the covered dough in the fridge for a couple of days and it still makes some great cookies. 🙂

Preheat the oven to 375 degrees F (190 degrees C). Roll dough into walnut sized balls, and roll them in the remaining white sugar ( the kids love to help with this part ). Place the cookie balls two inches apart on an un-greased baking sheet.  Bake for 8 to 10 minutes in the preheated oven, until the tops are cracked. Cool your cookies on wire racks and then enjoy!  This recipe is supposed to yield 5 dozen cookies, but we have never produced that many.  That probably has something to do with the kids making the balls. 🙂

    And…you…are…the molasses cookie judge, Suz! 🙂 I will try this recipe someday…..but……..question…..did you try making them with egg substitute? I think William looks like he would LOVE to try one! 🙂

    YUM!!! Ginger Molasses cookies are my go to cookie when I do a cookie exchange. Are yours slightly chewy inside or a fully crunch cookie?

    Suzanne, I am going to try this recipe but I’ll try an egg substitute and let you know how they turn out. I always made “Peanut Butter” cookies, but they don’t last long enough to make anymore, besides William can’t have them. Maybe you can let me know the name of the product that is the substitute for peanut butter, and I can give that a try.

      That is a great idea Mom! I have to admit I have never given the peanut butter substitutes to William before, but maybe it is worth a try. You can either use Wow Butter or Sun Butter. We shall talk..

    Glad to hear I’m not the only mom who doesn’t bake 😉 These look yummy. Love that your kids help make it. We also can never get the batch size right. Especially since my hubby LOVES eating raw dough 😉

    oh yummy! I love molasses cookies I haven’t made them in a few years. For a while I would search the internet for the recipe with the most molasses! I’m not sure what my fav cookie would be, sometimes I think it is a plain sugar cookie, cooked just right that it is soft in the middle, pale, chewy and good to have with milk. Molasses are a close fav, too.

    Molasses is high in nutrients – that almost makes these cookies GOOD FOR YOU!!!! I love the idea of a good-for-you cookie! They also look like a lot of fun to make . Thanks for sharing! 🙂
