Everyone needs a little comfort food now and then ( or everyday, but I am not keeping track) and Melt In Your Mouth Buttermilk Biscuits fall within that category. My mom and my aunt have been trying to show me how to make their special tea biscuits for a very long time, but I just never quite got the hang of it. That might have been due to my lack of kitchen prowess, however, I digress. Recently my hubby, Doug, has been dabbling in the kitchen and he decided to try his hand at this oh so elusive baked good. The result was these light and flaky, Melt In Your Mouth Buttermilk Biscuits! The best part is William can have them as they are free of peanuts and tree nuts! Wanna try them out?
Ingredients:
- 2 cups of All Purpose Flour
- 2 1/2 tsp of baking powder
- 1 tsp of salt
- 1/2 tsp of baking soda
- 1/2 cup of vegetable shortening
- 1 cup of buttermilk
- 1/3 cup of raisins (preferable, for me, but not for Doug so there are no raisins in this recipe 🙁 )
Directions:
First you will want to preheat your oven to 425 degrees Fahrenheit or 220 degrees Celsius and let it come up to temperature ( not one of my strong suits, but a must for Dougie. 🙂 ) You will also need to line your cookie sheet with parchment paper or tinfoil. We use tinfoil.
First step is to combine all the dry goods together in a large mixing bowl: the flour, baking powder, salt and baking soda. Next you will need to add in the shortening. You can use a mixer, but this can get a little tough so I, I mean Doug, suggests you just chop it up into small pieces and mix those into the dry mix using a fork or spoon. At this point the mixture will crumble easily.
Now you can add all of the buttermilk into the mixing bowl, using your fork to blend it all together. This should produce a sort of sticky dough. If you are adding raisins now would be the time to do it. Once this is done dump the dough onto a floured cutting board and start kneading! Be gentle, but this is a good time to work out some of your aggression. 🙂
Now you can roll out your dough into the thickness you desire. As you can see we could not locate our rolling pin ( probably in with the kids toys having been used for a microphone or something) so we just used a floured glass! In baking, as in life, one must think on their feet!
As for the thickness of your dough a 1/2 an inch to 3/4 of an inch should be fine. You are now ready to cut out your buttermilk biscuits into shapes! The traditional shape is round, and we did do some of those, but we also used a cookie cutter for the fun of it. Whatever you use make sure to dip the end into flour before you cut out your shape. This is to avoid the dough sticking.
Place your biscuits on your cookie sheet and pop them into the oven. Let them cook for about 12 to 15 minutes or until they are a nice golden shade. A typical batch should get you about 18 to 20 Melt In Your Mouth Buttermilk Biscuits, but that will depend on the size of your, ah, cutter outer thing. I found when we used the cookie cutters that we only got about 12 to 15 biscuits.
Hot out of the oven is the best way to serve up your Melt In Your Mouth Buttermilk Biscuits! William likes his with strawberry jam, but I prefer raspberry. Emily and her dad, the baker, generally stick with butter. Any way you prepare them they will be delicious! Bon appetite!

Thanks, Suzanne! Well, although Doug did the work on the biscuits, you did the blog! 🙂 There are so many different recipes for biscuits and different tastes on what biscuit is the best! I like to try different recipes and I will definitely try this one. My recipe differs in that I use a level teaspoonful of sugar, regular milk and one egg. Otherwise, it is pretty much the same recipe! And, oh, I think 12 to 15 biscuits is a good yield! 🙂

These biscuits look very good. I remember years ago, my hubby decided he was going to make some. They were coming along good but when he took them out of the oven he said, what happened to my biscuits, they can bounce off the wall.
