Easy Peasy Cheesy Cheesecake! #Recipe

So you know me, I don’t like to cook – much, or bake – much, but it is fun to watch. 🙂  That was my role this weekend while my hubby made his first ever Easy Peasy Cheesy Cheesecake! I watched, held the bowl, took some fabulous photos, generally kept him company (probably blogged at the same time) and ultimately I was the taste tester.  Not bad for a day’s work.. So, back to the Easy Peasy Cheesy Cheesecake.  I, like my husband Doug, thought making a cheesecake was going to be a daunting task, but it was actually pretty simple, err easy.  Had I known this before methinks we would have made Easy Peasy Cheesy Cheesecake a long time ago! So, here is the low down should you want to try this timeless delight yourself..

Ingredients:

  • 1 & 1/4 cups of graham cracker crumbs
  • 1/4 cup of melted butter
  • 3 packages of cream cheese, softened (250 grams each)
  • 3/4 cup of white sugar
  • 1 tsp of vanilla
  • 3 eggs
  • 9 inch springform pan

Directions:

The first thing to do is preheat your oven to 350°F.  I have a bad habit of not preheating for the full required time and yes, I must admit, this can have a negative affect on cooking time, thus resulting in undercooked food.  I am not going to link to a specific post of mine to give you an example because you can pretty much pick any of my recipe posts to read about how this issue has caused me problems. #LifeOfANonBaker.  So the moral of this story folks – PREHEAT!

Next you will want to make sure your graham cracker crumbs are nice and crumbly, but not too small.  You want it to adhere together.  Now the Easy Peasy Cheesy Cheesecake recipe is best with using 1 & 1/4 cups of graham cracker crumbs, but if you like a thinner base for your cake use about a quarter of a cup less and if you prefer a thicker base use a quarter to a half a cup more of crumbs.  You will have to adjust your melted butter as well. Combine the crumbs and melted butter together in a bowl.  Use your hands to mush it all together.  Then, after putting your springform pan together (can you believe we had to buy one! Aren’t these pans not a staple wedding shower gift? #HowDoWeNotHaveOne) press the graham cracker crumb mixture into the pan.  Make sure to cover the bottom, spreading it to the sides for an even base.

Combine the three packages of cream cheese (we used Philadelphia, but only because we wanted to) together in a bowl with the sugar and vanilla.  Use a hand mixer to beat that bad boy together! Once it is all mixed together you can add in your eggs, one at a time.  Use the mixer on a lower speed to combine each egg after you have cracked it into the bowl, blending well. Now that the mixture is all nice and smooth you can add it to your pan.  Just pour it over the graham cracker base evenly.  It will fill about two inches from the top.

**TIP** Now you are ready for the oven, like Hansel and Gretal. 🙂 It is pretty easy to crack the top of your cheesecake, so I am told, so when baking the Easy Peasy Cheesy Cheesecake we put a pan of water in the oven, right beside it. This adds a bit of moisture.

When you remove your cheesecake from the oven take a flat edge knife and run it around the edges to loosen it from the sides. Let it cool for a bit, then remove the outer rim of the pan.  We let the cheesecake stand for about a half hour then sampled it.  Boy was it ever good!  You can also refrigerate your cheesecake before eating it, for about three hours. Some people like a topping of some sort, like fresh fruit or caramel drizzle, but we like our Easy Peasy Cheesy Cheesecake nice and plain.  Let me tell you, it tastes heavenly either way. 🙂

    I love easy cheesecakes and I’m actually not a big fan of toppings. Have you tried the new philly chocolate cream cheese? I think it’d be so handy for creating a cheesecake with an extra something with minimal extra work.

    I love to bake all the time, everything. If I can make it I do. Sometimes simple is the best though, and this included cheesecake. Think of how lovely that would be with a cup of hot coffee by it’s side.

    I have NEVER in my life attempted Cheese Cake, but it is my FAVOURITE dessert. (I am a terrible cook and object to pre-heating, too.) I think I can handle this recipe.

    I prefer cheesecake plain. I’ve never been a fan of fruit toppings. I feel it takes away from the cheesecake, which is full of flavour already. Thank you for sharing the recipe!

    Cheesecake ingredients are pretty costly over in Singapore, and when I saw the amount of cheese, cream, sugar involved in making a cheesecake, I was afraid. It’s still better for me to buy and eat out!

    I love cheesecake! Although I’m a pretty good cook, cheesecake has always intimidated me for some reason. This post, however, has changed my mind! I like my cheesecake plain, maybe a little caramel or fresh whipped cream. My husband likes it with fresh huckleberry sauce. We live in Montana and pick huckleberries every year.
