Most of my weekday morning meals, AKA breakfast, are taken in the car when I am on my way to work. For this reason that oh so important meal of the day can often be unhealthy. Time is my biggest factor in having a good, filling breakfast so finding recipes that I can take “on the go” are important. That is why I love this recipe for Banana Bread Breakfast Muffins that my dear hubby has concocted. Add in a baggie of apple slices and a yogurt at my desk and I am good to go! Give them a try and make sure to let me know what you think of this great recipe.
Ingredients:
- 3 ripe bananas, mashed up
- 1 cup of white sugar
- 2 cups of all purpose flour
- 1/2 cup of vegetable oil
- 1 egg
- 1 teaspoon of vanilla
- 1 teaspoon of baking soda
- 1/2 teaspoon of salt
- 1/4 cup of chopped walnuts or coconut (optional)
Directions:
First off you will want to preheat your oven to 350°F (175°C). I have been learning the true value of the preheated oven. I never used to preheat, but it can make the difference in getting a proper, even baked good.
Get out your muffin tin and either grease it with a little butter or spray or, for an easier clean up just use the little muffin tin liners. This is going to sound silly, but I like to use the fun ones you can find in the dollar store. They add a little pick me up to the day!
Next combine your sugar, oil and egg in a large bowl until the mixture is creamy. It should also be a nice light yellow colour at this point. Next add in the mashed bananas and walnuts or coconut if you have chosen to add one or both of these ingredients. With William’s food allergy to all nuts we do not add these ( yes I know coconut is not a nut, but I am a bit paranoid). Stir thoroughly.
Next add in the flour, baking soda and salt. I can recall helping my mom make loaves and muffins as a child and with these dry ingredients she would have them on a piece of waxed paper. She would mix the baking soda and salt in with the flour and then, little by little she would add this dry mixture to the wet. It is not rocket science, I know, but it helps to add this in small amounts while you stir the entire mixture together.
Once all of the ingredients are mixed and your batter is nice and smooth you can spoon it into your muffin tin. This recipe will yield about 12 nice sized muffins. Bake for about 35 minutes. Use a toothpick to poke the center of a couple of the muffins to make sure it comes out clean.
These delicious Banana Bread Breakfast Muffins are wonderful served hot with some butter. In the morning I will pop mine into the microwave for twenty seconds to warm them up for the ride to work. Yum!!

I’ve been making espresso banana bread lately. Just add three sachets of high quality instant coffee (I get mine from Starbucks but I know there’s a lot of brands out there). It doesn’t make the banana bread taste like coffee, just makes the flavor deeper and richer and just amazing!
