Chewy chocolate oatmeal cookies, four words that make my mouth water. 🙂 And they will make yours water too, when you give this ah-maz-zing recipe a try. Earlier this year my daughter Emily started to bake, almost every day! Her first cookie recipe was a hit, but we ate them all too fast for me to share here with you. But the next batch, it’s yours! Now these chewy chocolate oatmeal cookies are not hard to make and they stay fresh and chewy for quite awhile. Yes, we did have them longer than usual because, well, we just had too many baked goods all at once. 🙂 Okay, so now it is your turn, my friends. I hope you will give this delish recipe a try (and others) and then let us know how they turned out!
Chewy Chocolate Oatmeal Cookies
Ingredients
- 1 & 1/2 cups of all-purpose flour
- 1 teaspoon of ground cinnamon
- 1 teaspoon of baking soda
- 1 teaspoon of salt
- 1 cup of unsalted butter, softened at room temperature
- 1 cup of packed light or dark brown sugar
- 1/2 cup of granulated sugar
- 2 large eggs, at room temperature
- 1 tablespoon of dark molasses
- 2 teaspoons of vanilla extract
- 3 cups of old-fashioned whole rolled oats
- 1 & 3/4 cups of semi-sweet chocolate chips
Directions
1) Add the flour, cinnamon, baking soda and salt together in a medium size bowl. Combine it all together using a whisk and set aside for later.
2) In a second bowl, combine the oats and chocolate chips, mixing evenly.
3) Beat the butter in a large mixing bowl using a hand or stand mixer. Emily used the regular beaters on our hand mixer, set on a medium-high speed, for about 1 & 1/2 minutes until the butter was smooth.
4) Next add the eggs, cracked of course 😉 , molasses and vanilla to the butter and beat on high until this mixture is nicely combined. This will take about one minute. Make sure to scrape all the goodness up, then beat again to get all the bits in the bottom mixed in well.
5) Next, add the dry ingredients to the wet ingredients and mix on low until combined (that word sure does get used a lot and no, I could not find a suitable synonym.)
6) Now comes the fun part! Leave the mixer running on low speed and slowly add in the oats and chocolate chip mix. Beat this well, noting that the dough will be thick and sticky. Resist the urge to taste it. 😉
7) Cover the chewy chocolate oatmeal cookies, well the dough and set in the fridge to chill for about an hour. The dough can actually stay refrigerated for up to six days! I know this because that is what my daughter did. I sometimes wonder if chilling them for six days added to their yummy factor? Note that if you do chill the dough for that long, you will need to leave it out at room temperature to soften for a good hour.
8) Preheat your oven to 350ºF and line your baking sheets with parchment paper.
9) This recipe was designed to make big cookies, so you will want to use a large spoon or scoop to pick up the dough. Emily wanted to make her cookies turn out evenly, so she literally cut the dough into four sections, making six cookies from each section. You do not have to be as precise, unless you want to. 🙂 Scooping up 2 & 1/2 to 3 tablespoons of dough will make a nice sized cookie. You can shape the dough into a sort of ball/clump and place on your cookies sheets. Leave about four inches between each cookie (pretend they have to practice social distancing) as they get big as they bake. Bake for 14 minutes or until they are lightly browned on the sides.
10) Remove from the oven and let rest for five minutes before transferring your cookies to a wire wrack to cool. That said, they are so darn good when they are warm, don’t let all of them cool! Enjoy!
Note: As with most cookie recipes you can add in different items to change up the taste. We have not done this yet, but maybe add in some milk chocolate chips or white chocolate chips in different sizes. I am dying to try this recipe using raisins next!

I will give this recipe a try but I will make smaller cookies. Maybe try a tbsp and a half and drop on the parchment lined cookie
Sheet, bake and enjoy. I do like raisins so I would add them to my recipe. Will let you know how they turn out.
