My choice for today is a dessert I remember with fondness. I have not had it since 2009 and that is a crying shame. 🙁 This lovely confection is called Blueberry Buckle and was found at the Garden Grill in Epcot’s The Land Pavilion. The buckle part was like a white cake with a hint of spice and it is filled with fresh blueberries, grown right in The Land! The cake had this kind of crunch to the outer layer and was just perfection. The whole thing was served warm in a skillet and topped with a thick whipped cream. Mother of pearl it was divine. That was seriously an amazing treat. 🙂
Four years later and I can still taste it ( and not in a bad way either..)
Ever had any Buckle, be it from Disney or elsewhere? I will share a little secret with ya. I did find another Buckle at Disney during that very same trip. I don’t think I have ever had that (but then I didn’t like blueberries until this year). It looks delicious!
It really was good Kimberly and it was served warm. My understanding is that they would use whatever fresh fruit was on hand so I am sure it would be good with other berries like raspberries 🙂

I have had a form of blueberry buckle and I loved it.
OK Suzanne you are killing me with all the yummy treats from your blog but at least there’s a couple that are recipes instead of unattainable Disney desserts. Anyway now my sweet tooth is screaming so I have to go to my secret stash for some chocolate, yummy !
