Food is Fun Friday: POFQ Beignets

So, it has been awhile, a long while, since I have graced the pages of my beloved blog.  Summer time is hectic enough, but some health concerns derailed me for a bit, however I am testing out the waters today with a fun, food related post.  Nothing wrong with that, right?

My favorite Disney resort to stay at is the Port Orleans French Quarter.  It truly is like coming home when we stay there.  I love that everything is familiar to me and that includes a treat they serve piping hot in the charming food court, Sassagoula Floatworks.  That treat is a New Orleans style beignet, which is like a fried doughnut covered in powdered sugar. Yummy just does not cover it my friends. 🙂  They are served hot and are great to enjoy on a cooler day.  Oh who am I kidding?  They are great ANY day, 🙂

 

 

 

 

I thought I would share with you the recipe for beignets, which Disney seems only to happy to share as it can be found on many a blog or website.  If you try making these, please let me know how they turned out!  Without further ado I give you beignets…

Ingredients:

1 pack of dry yeast
1/2 cup of sugar
2 eggs
7 cups of flour
1 1/2 cups of warm water
1 tsp of Salt
1 cup of undiluted evaporated milk
1/4 cup of soft shortening oil, for frying
Confectioner’s sugar (powdered sugar)

Directions:

In a large bowl, sprinkle the yeast over the water, stir to dissolve.  Add in the sugar, salt, eggs, and milk. Blend with the rotary beater. Add the flour. Cover and chill overnight. Roll out on a floured board to 1/8″ thickness. Cut into 2 1/2″ squares. Deep fry at 360 degrees for about 2-3 minutes or until lightly browned on both sides. Drain on paper towels. Sprinkle heavily with confectioner’s sugar. Makes about 5 dozen.

 

 

 

 

 

 

 

With the fall like weather today and this upcoming weekend I just might have to give these a try myself. 🙂  Enjoy!

    We missed having these when we were in New Orleans for Mardi Gras, the line ups were so long
