The following recipe is chock full of BEANS, just like my kids 🙂 It is courtesy of a co-worker and good friend Amy and is really tasty. As many of my family and friends can attest, I am not a true “foodie”, but I do appreciate flavors that work well together. Add in some decent textures and I will be a happy camper.

RECIPE
- -1 can of red kidney beans
- -1 can chick peas (garbanzo beans)
- -1 can green beans (not French cut)
- -1 can yellow wax beans
- -1 can lima beans
- -1 can white kidney beans or navy beans
- -1 cup chopped red onion
- -1 small green bell pepper, chopped
- -1 small red, orange or yellow bell pepper, chopped
- -2 stalks of celery, sliced thinly
- -2/3 – 3/4 cup of granulated sugar
- -2/3 cup of vinegar
- -1/2 cup of light canola or salad oil
- -2-3 tablespoons of fresh parsley, chopped
- -1/2 teaspoon of dill
- -1/2 teaspoon of basil
- -1/2 teaspoon of rosemary
- -salt and pepper to taste
Open cans and drain the beans. Do not rinse. In a large mixing bowl, combine the beans, onion, bell peppers and celery. Mix well to combine flavours.
In a small saucepan over medium heat combine sugar, vinegar and oil. Stir constantly until sugar is dissolved. Remove from heat and add in the dried herbs.
Pour dressing over the bean mixture. Add parsley and stir well to coat. Cover and refrigerate until to serve – at least four hours. This salad will keep well in the fridge for several days and it tastes best the day after preparation.
Makes 8 to 10 servings.

I like bean salad because it has a tangy flavor plus it’s fairly healthy. I’ve never used chick peas before but I’m going to use them next time
