Healthy #Chili Recipe That’s Easy to Make!

The past few weeks Southern Ontario has been hard hit with some nasty winter weather, with ice and snow covering everything.  What better way to combat the cold then with some Healthy Chili to warm your insides. 🙂  What’s even better is that I didn’t have to make it!  I am fortunate that my hubby likes to cook and it seems the apple hit Emily on the head on it’s way down because she too enjoys cooking and learning all about it.  This great Healthy Chili is a combination of my parent’s recipe with some slight alternations and add on’s from Emily and Doug.  Personally I loved it and I think you will too.  This chili is “picky child” friendly because it has some healthy surprises hidden inside and it is easy on the wallet to boot!  Why not give this recipe a whirl!

Ingredients (for a double batch):

  • 2 pounds of lean ground beef or turkey
  • 1 large (540ml) can of dark red kidney beans
  • 1 large (796 ml) can of diced tomatoes
  • 1 large (540ml) can of chick peas
  • 2 small (284ml) cans of tomato soup
  • 1 small sweet onion
  • 3 tbsp of chili powder
  • 1/2 tbsp of garlic powder
  • 1 tsp of pepper
  • grated marble cheese
  • sour cream
  • nacho chips

Directions:

Brown the ground beef or turkey in a frying pan, draining the fat.  If you have a large skillet you can cook it all in the same pan, but we moved the ingredients into a large pot.  In the pot pour in your tomato soup and all the kidney beans, adding the juice as well.  Cook your Healthy Chili on low to medium, stirring occasionally to avoid sticking.  Now comes the fun part.  In a blender or using a hand blender, puree the chick peas, juice included and the whole can of tomatoes.  My hubby Doug chopped up the the onion, but then added it to the blender.  Our kids are picky so even the tiniest of onions would have been searched for like they were free tickets to front row seats at a One Direction concert.  Your pureed mixture can now be added to your pot!  Dump in your chili, garlic powder and pepper and stir away!

Healthy Chilli, MapleMouseMamaLet your Healthy Chili simmer on low for about thirty minutes so that it will thicken.  You could add tomato paste to help the thickening process, but we found just letting it simmer did the trick.  Your chili is now ready to serve!  I enjoy chili on it’s own or adorned so we had a couple of options.  Grated marble cheese can be sprinkled on top or mixed in.  Use nacho chips to scoop up your servings and add a small dollop of sour cream to offset the spicy chili, if you like. 🙂  Bon appetite!

    Yummy, looks good. We eat chili fairly regularly in the winter. I’ve never thought to add tomato soup though and would be a good substitute if I find myself without tomatoes. We have to have bell peppers in ours though. Thanks for sharing.

    I find it interesting that you blended the chickpeas into the sauce. Definitely much healthier than using roux or flour to thicken it. Sounds so yummy!
