I am sure my household is not the only one to have leftover Easter chocolate coming out of your ears, right? Now usually the words ‘leftover’ and ‘chocolate’ would not be uttered in the same sentence by moi, but this year I am trying to be good for
my waistline’s sake the kids sake. Every year we freeze some of the chocolate or put some away to use as special treats. Frozen chocolate never usually turns out well and it ultimately gets thrown out so this year my in-house baker, AKA hubby, decided to rescue some of the chocolate bunnies and eggs. He did this by making cookies. The result is Leftover Easter Chocolate Cookies and they were pretty darn good! Raid your children’s stockpile and see for yourself.
Ingredients:
- 1 cup of brown sugar, packed
- 1 cup of granulated sugar
- 1/2 pound of unsalted butter, room temperature
- 2 teaspoons of pure vanilla extract
- 2 large eggs
- 2/3 cup of unsweetened cocoa
- 2 cups of flour
- 1 teaspoon of baking soda
- 1 teaspoon of kosher salt
- 1 & 1/2 pounds of leftover Easter chocolate, chopped up
Directions:
First you will want to preheat your oven to 350 degrees (Fahrenheit). Get out your cookie or baking sheets and line them with parchment paper or tinfoil. We use tinfoil. Decide which of your chocolate animals is getting the ax, so to speak.
In a large bowl cream the softened butter together with both the brown and white sugar. I strongly suggest making sure your butter is softened. Ours had not been left out long enough and it was a little tough to mix together. Using your electric mixer combine the three ingredients together until the mixture is light and fluffy. Then add in the vanilla, then each egg, one at a time, and mix well. Next mix in the cocoa.
On a piece of parchment paper sift your flour together with the baking soda and salt. Once combined add the mixture of dry goods to your bowl. Next up is your leftover Easter chocolate. It is best to chop your chocolate up as if it were celery. You kind of need a good balance between grated and slightly chunky chocolate. It will melt either way and trust me it is good. My hubby combined the mixture mostly by hand, but did give it a few zaps with the mixer to break up some larger chunks.
Using a spoon scoop up the Leftover Easter Chocolate Cookie dough making little balls and place them on your lined baking sheet. With slightly damp hands press down on the cookie balls to flatten them a bit. The dough is thick and needs this little push. Pop your cookie sheet in the oven and cook for 14 to 17 minutes. The longer they are in the crispier they will be. Take them out of the oven and let them cool before enjoying your Leftover Easter Chocolate Cookies with a big glass of milk!

lol yup, I just peeked in the basket today, we still have chocolate and loads of jelly beans leftover, we either need to toss it or look for other ways to use it up! These look great!

Great idea! I didn’t over buy this year, so we didn’t have any leftovers this year.
We have such a large extended family that there are always left overs, but now we have a new way to use them up!
My first thought was ‘left over chocolate’ is like ‘left over wine’………when does that happen? lol However, I also thought that if a person wanted to make a special chocolate cookie like these, Suzanne, maybe taking advantage of the after Easter sales in department stores or the bulk food store might be worth while? These look delicious!

The thing is… we do not have leftover chocolates. If we want to to bake cookies, we buy new packs and bake them immediately. Otherwise, we shortcut! The chocolate goes directly to the mouth. hehehe! The cookies look good!

Haha funny post! I’m not much of a baker, but my mom has been making leftover Easter chocolate cookies for years. She gets a ton of bunnies after easter when they go on sale & saves them specifically for baking. They are soooo good!
