‘Tis the season for all things peppermint, like these yummy peppermint cupcakes! And you’re going to love how easy this icing recipe is to whip up. Use your favourite cake recipe or cake mix for the cupcake base and then add in the magic. Use this delicious icing on other holiday treats, like sugar cookies or as a dip for shortbread fingers. Give it a try!
Pretty Peppermint Cupcakes
Ingredients
- 12 of your favorite vanilla cupcakes
- 2 sticks of butter, softened
- 4 cups of confectioners’ sugar
- 4-5 tbsp of milk
- ½ tsp of peppermint extract
- 7-8 peppermint candies
Directions
Yields: One dozen decorated cupcakes
Before starting with the decorating process, ensure that your cupcakes are cool to the touch.
Using an electric mixer, beat butter, confectioners’ sugar, milk and peppermint extract on medium speed. Gradually increase speed to high.
Your buttercream is complete once the ingredients are well-mixed and smooth. Scoop the buttercream in a piping bag and frost each cupcake.
Place your peppermint candies in a sandwich bag and break them into small pieces using a rolling pin.
Sprinkle the peppermint pieces on each cupcake and serve. Enjoy and happy holidays!
Peppermint is a favourite flavour of mine for any time of the year. Aside from topping a tasty vanilla cupcake, I would love to ice Crinkle Gingerbread cookies with this peppermint icing or perhaps a lovely chocolate cake. 🙂

Recipe is right on for this time of year! Did you think that some peppermint extract added to the cupcake would make it a bit more “Christmasy”? I will use this frosting on some of the cookies I have left to make., maybe I’ll make some ginger cookies.
