So BBQ season is here and I was lucky enough to score not only a great interview with the Vancouver Four Season’s Executive Chef Ned Bell, but also an opportunity to share this great recipe he prepared for us. It looks and sounds as yummy as it tastes; you will be clamoring for seconds, I promise. As a family with an allergy to peanuts and tree nuts we did not include the almonds, but it was just as tasty. Give it a grill!

Delicious BBQ Season Recipes

Roasted Lake Ontario Pickerel
BBQ Grilled asparagus and cauliflower
Classic Hidden Valley Ranch & Lime Vinaigrette
Ingredients:
5 oz pickerel per person (substitute halibut or trout if you wish)
10 spears of asparagus
1 cup cauliflower
1/3 cup Hidden valley Ranch Original Flavour
½ cup canola oil
1 tsp sea salt
1 tsp cracked black pepper
2 tbsp raw or toasted almonds
sprigs of fresh thyme
*** This is a super simple summer bbq recipe! The veggies you choose really depend on what inspires you while shopping at the market! Grilled zucchini and sweet peppers are great!
- Pre-heat the bbq to medium high heat
- Make sure the grill is clean and wiped with a towel so the fish doesn’t stick
- Season the fish with sea salt and cracked pepper, as well as some fresh picked thyme
- Rub the fish with canola oil, and place on the grill for 3 minutes, flip and continue cooking for another 3 minutes. If you prefer to watch for the temperature of the fish, items like an IGrill 2 Bluetooth Thermometer are perfect for your BBQ chef
- Toss the veggies on the grill, do not over cook, cook just enough until they start to brown and caramelize for additional flavour
For the Vinaigrette:
- Puree the mustard, 1/2 cup canola oil and 1/3 cup classic Hidden Valley Ranch
- Add lime juice, a pinch of sea salt and cracked pepper
To assemble the recipe:
- Build the veggies on the platter, top with the fish and 2-3 tbsp of the vinaigrette
- Garnish with raw almonds
You can build the dish individually or family style, and it is great with some fresh lettuce from the garden as well!

Ooooh, that looks completely amazing! I like fish but I find it hard to cook… sometimes it’s just too bland or something. I do like nuts so I’d probably include those.

Fish can be tricky Bonnie, I agree. This recipe had a great balance to it, but I would like to try it with a bit of crunch sometime.. enjoy!
