When it comes to sweet treats, Marshmallow Squares are the perfect way to satisfy a craving. Make them with your kiddos and have them decide on some different ways to decorate this cool dessert. Use a variety of colours or even stencils to change up the end result of your creations! The following recipe is straight out of the kitchen of Kathy Downey! Ingredients
- 1 Cup of Flour
- 1/4 Cup of Brown Sugar
- 1/2 Cup of Butter/margarine
- 2 Cups of White Sugar
- 2 Packages of Knox Gelatin
- 1 Tsp. of Vanilla
- 1/2 Tsp. of Vinegar
- 1/2 Cup of Cold Water
- 3/4 Cup of Warm Water
- Coconut
Directions For The Base
Before you begin preheat the oven to 325° F and move the rack to the center. Lightly butter your 9 x 13 baking dish or use a non stick cooking spray.
In a bowl combine the flour, brown sugar and butter until the mixture starts to form small clumps.
Press the dough into you baking dish evenly and firmly, working into the corners.
Bake the base of your squares for 20 minutes until the edges start to brown. Remove from the oven and set aside on a baking rack to cool completely.
Directions For The Topping
Add the 2 packages of gelatin to a 1/2 cup of cold water and let sit for 10 minutes.
Next, add 2 cups of white sugar and a 3/4 cup of warm water to a pot and bring to a boil. After about one minute the sugar will melt so it is now a clear liquid. Remove from heat and add the gelatin water mixture and stir. Set aside and let cool.When it has cooled add 1 tsp. vanilla and 1/2 tsp. vinegar.
Beat this mixture on high until it forms a fluffy white marshmallow and pour over the COOLED crust. (It’s very important the crust be cooled. If not the marshmallow will separate.)
To dress up your Marshmallow Squares add a few drops of food coloring and pull through with a tooth pick. Alternatively, you can add a few drops of coloring right to the bowl of marshmallow and make a solid color.
When you are finished put the dish of squares in the fridge for a few hours to set. Next, cut into squares, sprinkle your coconut over the top or roll each square on a plate of coconut.
Serve and prepare to want seconds!
