Have You Tried Popcorn Cake Yet? #Recipe

I love to be surprised with new and delicious treats every now and then and Kathy’s Popcorn Cake has done just that. It is a fun recipe that you will want to make with the little ones in your life or just to treat yourself. 🙂 With just a handful of ingredients, you will be returning to this one time and again.  After you have given this delightful dish a try, hop on over to check out some of the other yummy recipes Kathy has shared with us.

Ingredients for Popcorn Cake

  • 1/2 cup of butter
  • 1/2 cup of oil
  • 6 quarts of POPPED popcorn
  • 16 oz of large, white marshmallows
  • 16 oz of jube jube type candy

 Directions

1) Pop your popcorn as you normally would. It is best to use plain popcorn as opposed to an extra buttery kind. Remove any un-popped kernels and discard.

2) Combine the 6 quarts of popped popcorn and your jube jube candy in a large bowl, mixing thoroughly. Set aside.

3) Grease the pan you plan to use to shape your popcorn cake. You could use loaf pans, a bundt pan etc. Make sure to grease this well.

4) On the stove, heat the butter and oil together in a large pot.  Gradually start to add in your marshmallows, stirring constantly and until all the marshmallows have melted.

5) Once the marshmallows have melted, immediately pour the mixture over your bowl of popcorn and candy. Stir gently to spread the mixture, but don’t over-mix.

6) Transfer to your greased cake pan and let this set up in the fridge overnight. You can cover the top with a clean dish cloth or plastic wrap.

7) The next day cut your popcorn cake into slices and serve with a glass of cold milk. 🙂 Enjoy!

**You can make different variations of Popcorn Cake by adding in other candies, nuts or even things like raisins.

    Now this recipe is quite different than a rice krispie recipe but one the kids would love. I think this is a must try. Thanks for sharing.

    When my children were young I made this recipe frequently. They loved it and so did I. My children are grown now but I think I will make this treat for myself and my adult friends, it’s a yummy treat for any age.

    This looks like a ‘must try’! I wonder, though, if I substituted gum drops for the jubes jubes,? Maybe even try both! 🙂
