Kathy’s Baked Mac & Cheese #Recipe

The cold days and nights of winter call for comfort food like Kathy’s Baked Mac & Cheese.  Warm and gooey, this dish is sure to please every member of your family, even the pickiest of eaters. Serve it with your favourite side dish or salad and a glass of milk to complete the picture and soon those long, cold winter nights will be nice and toasty. Enjoy!

Kathy’s Baked Mac & Cheese

Ingredients 

  • 3 tbsp of flour
  • 3 tbsp of butter or margarine
  • 1/2 tsp of pepper
  • 3 cups of milk
  • 1 & 1/2 cups of grated mild cheddar cheese for sauce
  • 1/2 tsp of mustard
  • 2 cups of cooked elbow pasta
  • 1/2 cups of bread crumbs
  • 1/4 cup of grated mild cheddar cheese for topping

Directions

1) Cook the elbow macaroni as per the directions on the box. Once done, drain off the water and set the macaroni aside to cool.

baked-mac-&-cheese2) In a saucepan, melt the butter, slowly adding in the flour and pepper. Stir well to blend the three ingredients together.

3) Next add in the milk, continuing to stir the sauce constantly until it thickens.

4) Remove the saucepan from the heat and add the 1 & 1/2 cups of mild cheddar cheese and mustard. Stir well until you have a nice, smooth sauce.

baked-mac-&-cheese5) Pour the sauce over the pot of elbow macaroni and mix well, making sure to cover all of the pasta. 

baked-mac-&-cheese6) Using a lightly greased 2 quart baking dish, pour the pasta and sauce mixture in and spread it out evenly. Sprinkle your bread crumbs across the top and the 1/4 cup of grated mild cheddar cheese. If you like you can add some parsley for colour, but this is optional. Bake at 400ºF for 20 minutes and serve nice and hot!

    My grandkids love this dish and ask for it when they visit. I try to only make it when they come because it’s so good I hate to have leftovers,I could eat this for days.

    I have only tried a mac and cheese dish once and the amount of cheese required was more than I could handle, but this dish looks reasonable and delicious, so I’m going to try this for sure. I think it appeals to the men in our lives and especially during the cold winter months. Well, I guess it is not cold for everyone, but here in Canada, we enjoy the four seasons!
