Every year I like to try a new Bean Salad Recipe. There are so many different ingredients you can add that the flavour will change with each new one tested. Check out this post for Tangy Bean Salad, one of the very first recipes we ever shared, back in 2012! While I know you will enjoy that one I suggest you give this Bean Salad Recipe a try first as it comes straight from Kathy, our resident recipe contributor. 🙂Â
Bean Salad
Ingredients & Directions for Salad:
- 1 can (19oz) of chickpeas, drained
- 1 can (16oz) of kidney beans, rinsed
- 1 can (14oz) of cut green beans, drained
- 1 can (14oz) of cut wax beans, drained
- 1 cup of sliced mushrooms
- 1 cup of chopped green peppers
- 1 cup of chopped onions
*Combine all of the above ingredients together in a large bowl.
Ingredients & Directions for Dressing:
- 1/2 cup of cider vinegar
- 1/3 cup of sugar
- 1/4 cup of canola oil
- 1 tsp of celery seed
- 1/2 tsp of pepper
- 1/4 tsp of salt
- 1/8 tsp of dried basil
- 1/8 tsp of dried oregano
1) Combine all of the above ingredients for the dressing together in a jar with a tight-fitting lid and shake very well.
2) Pour the dressing over the salad mixture and mix to wet all the ingredients, but be gentle so as not to damage your beans.
3) Refrigerate for at least 6 hours or overnight for the best results.
4) Serve as a side dish or even as your main! You will love the flavours. 🙂
