One thing I love about this time of the year is that everyone is baking! Cookies, like these Cherry Chocolate Cookies, seem to be the thing that gets baked the most, which works for me (and my nightly cup of tea.Ā š ) It is no secret that I am not the best chef or baker in this house, but that doesn’t bother me. My hubby is great at both, enjoys cooking and even the kiddos are having fun in the kitchen. But my biggest not-so-secret weapon and creator of this amazing Cherry Chocolate Cookie recipe is Kathy! You have all seen and hopefully recreated, some of Kathy’s delicious meal and dessert ideas, but if you haven’t, well, you’re in for a treat. šĀ
Cherry Chocolate Cookie RecipeĀ
IngredientsĀ
- 3/4 cup butter, softened
- 1 cup lightly packed brown sugar
- 1/4 cup white sugar
- 2 eggs
- 1 tsp. vanilla extract
- 2 & 1/4 cups all-purpose flour
- 1 tsp. baking soda
- 2 cups chocolate chips
- 1/4 of drained, maraschino cherries, quartered
Directions
1) Preheat your oven to 375 degrees F.
2) Pour the white and brown sugars into a large bowl. Add in the softened butter, creaming it until it is smooth. Now, not being a baker and all, I had no idea what it meant to “cream in the butter,” so I looked it up.Ā In case you don’t know what it means either, just take a peek here.
3) Next, beat in the eggs and vanilla extract, mixing them well.
4) In a separate bowl, combine the flour and baking soda together. Gradually add the flour mixture into the wet ingredients, stirring together until they are completely combined.
5) Add in your chocolate chips and mix just enough to until the chips are mixed into the cookie dough. Now you can fold in the cheese, I mean cherries (sorry, but I had to get that in here somewhere, being a huge Schitt’s Creek fan and all. š )Ā
6) Drop the dough in heaping teaspoonfuls onto a greased cookie sheet. Bake for 13-15 minutes or until they are lightly browned. Let the cherry chocolate cookies cool on the sheet for a minute and then transfer to a wire rack to fully cool.
7) Pour that cup of tea or glass of milk and enjoy!Ā

We have all had some interesting, challenging times in the past couple of years and if I have learned one thing, it is that time is not a guarantee.
