A pretty, pink dessert, like Grandma’s Cherry Cake, is the perfect sweet treat to serve your guests in the summer, don’t ya think? A tangy fruit that is bright and colourful combined with cakey goodness should always be on the menu and we have the perfect recipe for you to try out – straight from Kathy’s kitchen! I know you have enjoyed many of Kathy’s other great creations, so it is a no-brainer that her Grandma’s Cherry Cake will soon become a favourite too. Grandma’s Cherry Cake
Ingredients for the Cake:
- 1 & a 1/2 cups of butter or margarine
- 2 cups of white sugar
- 3 eggs
- 1 teaspoon of vanilla
- 2 teaspoons of baking powder
- 3 cups of flour PLUS 1/2 cup of flour to mix with cherries
- 1 cup of milk (fresh or carnation milk mixed equally with water)
- 1 375 ml jar of cherries, drained (save juice for icing)
Directions for the Cake:
1. First remove the cherries from the jar and drain the juice. Cut each cherry into a few pieces and mix with the 1/2 cup of flour. Set aside.
2. Using a mixer, cream the butter and sugar together. Once these two are mixed well add the eggs one at a time. Next add in the vanilla.
3. In a separate bowl combine the baking powder and flour together. Then add the milk.
4. Next, blend the egg mixture (step 2) with the flour mixture (step 3) until mixed well.
5. Now fold in the flour-coated cherries with a spoon . Pour into a baking pan (a bundt pan makes your cake very pretty) and cook for 90 minutes at 300 degrees Fahrenheit.
Ingredients and Directions for the Icing:
- 6 heaping tablespoons of Confectioners Sugar
- 5 teaspoons of cherry juice
1. Mix well and drizzle on the cake while it is hot.
2. Decorate with cherries and a dusting of Confectioners Sugar to top it off.
