With the lazy summer months coming up there is a greater chance you will have folks just stopping by for a visit, so it is always nice to have a new recipe on hand to surprise them with. Today we are sharing a scrumptious recipe of Kathy’s, our fabulous contributor of all things edible! Check out her yummy Chocolate Coconut Squares below and let us know if you make them.
Chocolate Coconut Squares
Ingredients for the base:
- 1/2 cup of white sugar
- 1 tbsp. of butter
- 1 egg yolk (save the white part for the filling below)
- 1/4 cup of milk
- 1/4 cup of cocoa powder
- 1/2 tsp. of baking powder
- 1/2 cup of all purpose flour
Directions for the base:
- In a small bowl sift together the cocoa powder, flour and the baking powder.
- In another bowl cream together the butter and sugar. Than add in the egg yolk and mix well.
- Alternate adding the flour mixture and milk to the creamy mixture. When mixed well add to a greased 9 x 9 pan and bake for 18-20 minutes at 350 degrees Fahrenheit.
- While the base is baking it’s time to make the filling!
Ingredients for the filling:
- leftover egg white
- 1/4 cup of sugar
- 1 cup of coconut
Directions for the filling:
- Beat the egg white and slowly add 1/4 cup of sugar until it forms a peak.
- On low, beat in 1 cup of coconut.
- When the base is cooked, remove it from the oven and carefully cover the base with the filling.
- Then return it to the oven until the coconut is lightly toasted. This usually takes about 5 minutes, but watch it carefully.
- Remove from the oven when done.
Ingredients and directions for the icing:
- 1 & 1/4 cups of icing sugar
- 2 tbsp of cocoa powder
- 2 tbsp of butter or margarine
- 2 tbsp of milk
Mix the icing sugar and the cocoa powder together. Next, add the butter and milk and combine this mixture until it is creamy. Then just top off your warm squares with the icing and you are done!
**It is best to refrigerate your squares for at least 4 hours before cutting. Enjoy!
