We have the perfect recipe for those surprise guests that pop in – Lemon Coconut Cookies! The holiday season has kicked off and you know that means work parties, brunch get togethers, gifts for the mailman and neighbourhood drop-ins start to happen. Having some delicious cookies on hand will not go unrewarded by family and friends alike and these yummy Lemon Coconut Cookies, made by our very own Kathy, are just the ones you need.
Lemon Coconut Cookies
Ingredients & Directions for Cookie Base
- 1/2 cup of white sugar
- 1 cup of butter
- 1 egg
- 2 cups of flour
- 1 tsp. of Cream of Tartar
- 1/2 a tsp. of baking soda
1) Place all ingredients listed above in a large bowl and mix together thoroughly.
2) Place dough on lightly floured surface and using your rolling pin (also lightly floured) roll flat. Make sure to roll the dough to be thin (about 1 cm thickness.)
3) Cut out your cookie shapes using either a round cookie cutter or any shape cookie cutter you desire. You will want to make sure to have an even amount of shapes to form the “sandwich” part.
4) If you choose to make the top cookie of the “sandwich” look like Kathy’s, you will need to create a hole in half of your round cookies. You can do this with a smaller round cookie cutter or even a small glass cup. Just make sure to dip the “cutter” you use into flour to make sure the dough does not stick.
5) Having preheated your oven to 325°F, place the cookie shapes on a cookie sheet and bake for 10 to 12 minutes until the cookies are a light brown.
Ingredients & Directions for Cookie Filling
- 1 cup of white sugar
- 1/2 a cup of fine coconut
- 1 egg, well beaten
- 1 tbsp. of Cornstarch
- Juice and rind of one lemon
1) The filling needs to be cooked in a double boiler. This is basically using two pots to heat up the ingredients. This post by Leaf.TV tells you how to create your own double boiler if you do not have one. Make sure to use a double boiler for this recipe.
2) Making sure the water in the bottom pot of your double boiler does not touch the top pot (you can test this out before you add the ingredients) start to boil the water. Once it has come to a boil, lower the heat and place your top pot on top. Carefully combine all of the filling ingredients together in the top pot of your double boiler, stirring gently and watching it closely. Make sure the water does not boil again.
3) Once the filling has cooked for a few minutes on low, check to make sure it has thickened and the ingredients have all dissolved/come together. Continue to cook for a little longer, monitoring closely.
4) Once your cookies and filling have cooled, assemble your Lemon Coconut Cookies by placing the solid cookie rounds on the bottom, spoon some filling on top and place your cookie round with the hole on top! Sprinkle with powered sugar, if desired and enjoy!

About the only think I eat that is lemon is a lemon meringue pie but these cookies look very good. I might have to give them a try.
