This No Bake Penguin Cookies recipe is a wonderful dessert to make with your kiddos for the holidays or even just on a snow day. Kathy shared this with me recently and I just love how cute these little cookie dudes look! While this particular recipe calls for the use of peanut butter, when we decide to make them we will be substituting the peanut butter with WowButter due to my son’s allergy. So just know you have options if you have a nut allergy and you want to give this one a try. Let us know if you make these sweet No Bake Penguin Cookies!
No Bake Penguin Cookies
Ingredients:
- Arrowroot biscuits (you can use any cookie of a similar size)
- Peanut butter creamy (about 1 tsp. per cookie)**
- 1 (16 oz) pkg. of chocolate chips
- Olive Oil
- Candy of choice/ Bright white chocolate candy melt wafers & orange wafers
- Reese’s Pieces, orange and/or yellow ones**
- Candy eyes
**As mentioned earlier you can make these cookies nut free by simply using an alternative to peanut butter, much like this recipe for Acorn Cookies. We have used WowButter before and it tastes really yummy! In place of using the Reese’s Pieces you can use Smarties, the ones that come in the Fun Size boxes. While these small snack size boxes were initially introduced for and sold during Halloween, they are now available year round in Canada.
Directions:
1) To assemble your No Bake Penguin Cookies, start by spreading the peanut butter or WowButter on your cookie and making a sandwich with another cookie. You can make as many as you like, but it is easier to create your penguins in batches of 8 at a time. Place these on a wax paper lined tray and place in the freezer.
2) Next, prepare your Reese’s Pieces or Smarties by cutting them in half to use for the penguin’s beak. You will need a sharp knife. Set them aside once cut.
**I feel the need to include a caveat at this point. Although this is Kathy’s recipe I have had issues in the past with melting chocolate chips to use when covering cookies. Issues that resulted in burnt chocolate and confirmation that I am not a very good baker. So I have altered her instructions a little to offer two ways to melt the chocolate chips.
3A) Using a microwave, melt one cup of chocolate chips at a time in a medium sized bowl. Start by heating the chocolate chips on medium for 30 seconds, than give it a stir. Continue to heat on medium for no more than 15 seconds at a time after that, stirring the chocolate after each 15 second interval to ensure even heating. If you find the consistency of the chocolate to be too thick, you can add a bit of Olive Oil, one teaspoon at a time, stirring it in.
3B) Using a double boiler, like we did in this recipe for Lemon Coconut Cookies, to melt your chocolate chips on the stove. This will take a little longer than using the microwave, but it is harder to burn your chocolate using this method. You may still find you need to add a little Olive Oil to the melted chocolate to thin it out. Remove from the stove.
4) Remove the chilled cookies from the freezer and using a fork dip each one in the melted chocolate. Use a spoon to scoop up the chocolate and pour over your cookie, if needed. Place the chocolate covered cookie on wax paper.
5) While the chocolate is still warm it is time to bring your penguin to life! Use the candy eyes to start making the face of your friend and use the half pieces of orange or yellow Reese’s Pieces or Smarties for the beak. You can use full ones for the penguin’s feet. In this recipe Kathy has used the white chocolate melts for the belly and added a smaller orange one on top. You can always mix things up a bit by adding other types of candy you may have on hand, like red licorice to make a scarf for his neck or instead of the orange chocolate wafers on the tummy put whole chocolate chips as buttons. The sky is the limit!
6) Let your No Bake Penguin Cookies sit in the freezer for about 15 minutes so that the chocolate can set. Serve up with some hot chocolate or a cup of cold milk and enjoy!
