Rhubarb and Strawberry Cobbler #Recipe

I was excited when Kathy sent me this delightful recipe for Rhubarb and Strawberry Cobbler because it has been eons since I have had rhubarb in anything! I recall as a youngster helping my grandpa pick fresh rhubarb from his garden during the summer and thinking it was such a pretty plant. My grandma would make jam from it and we would have it with vanilla ice cream. I can’t wait to give this special treat a try. The recipe sounds wonderful!

Rhubarb-&-Strawberry-Cobbler

Rhubarb and Strawberry Cobbler 

Ingredients and Directions for Part 1

  • 6 cups of diced rhubarb
  • 2 cups of diced strawberries
  • 1 cup of sugar
  • 1/4 cup of flour
  • 1/4 tsp. of cinnamon
  • 1/4 tsp. of nutmeg
  • 1/4 tsp. of cloves

Rhubarb-&-Strawberry-Cobbler

1) Combine all of the dry ingredients in a large bowl. 

2) Add the diced rhubarb and diced strawberries to the dry ingredients, making sure to coat the fruit with the dry mixture.

3) Pour the mixture into a greased 9 x 13 baking dish.

Ingredients and Directions for Part 2 (Topping)

  • 1 -1/2 cups of flour
  • 1/2 cup of sugar
  • 1/3 cup of cornmeal
  • 1 -1/2 tsp of baking powder
  • 1- 1/2 tsp of baking soda
  • 1/4 cup of butter 
  • 3/4 cup of yogurt or milk

1) Combine the dry ingredients together in a bowl.

2) Add the butter to the dry ingredients and mix well.

3) Next, slowly add in the yogurt (or milk.)

4) Once the mix is combined well, add by spoonfuls to the “part one” dish and spread it over the fruit blend.

5) Bake at 375ºF for 45 minutes and serve hot or cold with whipped cream.

**TIP: you can really make this cobbler with whatever fruit you enjoy!

    yes! totally trying this. I haven’t had a dessert involving rhubarb in SOOO long. my babcia used to make us rhubarb pie all the time

    I love rhubarb, but never made a cobbler with it, this recipe looks so good, and would be perfect with a hot cup of coffee!!

    I am a fan of rhubarb and I love the tart taste made into a dessert. I find it very refreshing. The rhubarb cobbler looks so delicious.

    I love rhubarb but seldom get it. Me I’d have the cobbler just with rhubarb. MY sister-in-law always makes a rhubarb crumble or pie when I’m there. 🙂
